Remainder of the carcass can be made into stock and that will make you way more than the asking price of the same liquid from your local grocer. Fresh home-made stock will bump up any rice or noodle soup you want. Plus, what you dont use quickly can be frozen into soup cubes.

I would personally argue that turkey is a better poultry, but the american thanksgiving roast is the worst way to cook most parts of the bird.
